Grilled English Muffins

How to Make Grilled English Muffins for Your Grilled Bratwurst Sausage

Preparing a delicious bread and sausage snack depends on what type of sausage you are cooking and the kind of bread you use. If you find a grilled bratwurst for your sandwich incredibly delicious, pairing it with English style grilled bread could make the whole package a perfect Bratwurst Day snack.

Regardless of how you cook brats, it takes a little while to cook thoroughly. When grilling, I suggest that you put the sausages in a pouch. Cook them with the correct temperature so your bratwurst will not come out burnt on the outside and not so done on the inside. When using a charcoal grill, wait until the charcoal has some white ash and is not too hot before putting your brats on the grill. Do not be tempted to pierce the skins to prevent the fat and juices from creating flame flare-ups that could burn the sausage and dry out the inside.

For your muffins, there is nothing like the tender and soft to bite English muffins for your brats. Here is a recipe on how to make grilled English muffins using a bread machine.

Ingredients:

  • 1 cup milk
  • 2 eggs
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 2 tbsp sugar
  • 3 1/4 cup bread flour
  • 1 1/4 tsp yeast
  • Cornmeal
  • Water

Preparation:

Except for the cornmeal, combine all ingredients into a pan. Secure the pan into the bread machine, cover with the lid and select the dough cycle. When the cycle has completed, remove dough from pan and bring to a lightly floured surface. Cover the dough with a large bowl and let it rest for 15 minutes.

After the 15 minutes, roll the dough out on a floured board to 1/4 inch thickness. Cut the dough into 3 inches circles and place the circles onto the prepared baking sheet. Slightly brush the tops with a little water then sprinkle with a little cornmeal. Cover the dough and let it rise in a warm place for at least 30 minutes, or until it has doubled in size. Preheat the grill to 500 degrees and put the risen circles on the grill to cook for 7- 8 minutes. Turn and continue grilling for an additional 6 minutes, or until golden brown. Fill the muffins with the grilled bratwurst sausages along with your favorite fillings. Serve while muffins are still warm.

You can substitute 1 cup of whole flour for 1 cup of bread flour if desired. For successful results, be sure to roll out the dough as directed in the recipe. Note that very thick dough will brown the muffins on the outside but will not properly cook the inside. It is also ideal to turn the muffins only once so the tops will not flatten.

Now you can enjoy fantastic grilled brats in grilled English muffins!

Fun Snack Recipes

Fun Snack Recipes Your Kids Will Love after School

When kids come home from school, they usually want to have a snack. Of course, if they are choosing the wrong snacks, the fat and calories can add up. Instead of allowing your kids to eat on processed snacks, it is important to have plenty of snacks around that are healthy for them. This way they can enjoy a nice snack that is healthy for them. If you are not sure what kind of snacks to make, here are a few great snack ideas and fun snack recipes that your kids are sure to love when they get home from school each day.

Peanut Butter and Jelly

More than likely you enjoyed eating peanut butter and jelly sandwiches when you were a kid. Turns out, this is a healthy snack for your kids. Instead of white bread, choose whole wheat bread, a whole wheat pit, or even a whole wheat English muffin. Go with all natural preserves or sugar free jellies. If your kids do not like peanut butter, substitute it with some cream cheese instead, which adds some protein to the mix.

Veggies and Dip

Another great option for after school snacks is veggies and dip. It is a good idea to chop up veggies and place them in serving size bags so your kids can grab them and go. Making healthy snacks easily accessible helps to make sure you keep kids from grabbing unhealthy snacks instead. Carrots, baby tomatoes, celery, peppers, and broccoli are all great veggie options. Make a healthy dip with fat free plain yogurt and a package of ranch dipping sauce.

Fruit and Cheese

Fruit and cheese is always a great combination, as long as you are going with low fat cheeses. Consider serving up apples and cheddar together for your kids after school. Laughing Cow low fat cheeses are great with apples as well. String cheese paired with a bowl of grapes or other fruit also is a healthy snack option they will enjoy after a big school day. Once again, it is a great idea to put fruits in serving size portions so kids can simply grab them and you do not have to do so much work when they get home from school as well. Make an easy dip for fruit by combining vanilla yogurt with cream cheese or by combining vanilla yogurt with marshmallow for a sweet dip that tastes amazing with the fruits.

Blueberries are nutritional superstars. They range in flavor from tart to sweet and are low in calories yet packed with nutrients. They are best when they are in season, from May through October.

They grow on a shrub and belong to the heath family with relatives such as cranberries, bilberries, mountain laurel, rhododendron and the azalea. Blueberries grow in clusters. They can range in size the size of a small pea to the size of a marble. They are a deep color (part of what makes them so nutritious).

For the vegan, this recipe delivers! There are no animal products in this recipe. If you are a real purist, the whole wheat pastry flour can be substituted for a purer option such as ground buckwheat. The honey can be substituted by agave nectar or maple syrup. These shifts in the recipe may change the flavor slightly, but the great thing about recipes is that you can experiment and find what works best for you.

Ingredients:

• 1 cup flaxseed egg substitute (if you are not vegan, you can substitute with 2 eggs)
• 2 cups soy, rice or almond milk (if you are not vegan, you can substitute with regular milk)
• 1 cup apple sauce
• 1 1/2 cups honey (or substitute with agave nectar or maple syrup)
• 1 1/2 Tbsp vanilla extract
• 7 cups whole wheat pastry flour, sifted (or substitute with ground buckwheat)
• 2 Tbsp baking powder
• 1 1/2 tsp baking soda
• 2 1/2 cups blueberries, frozen and chopped in a food processor
• 2 1/2 cups blueberries, frozen, whole (can use fresh also)
• Raw, unrefined sugar for sprinkling on top

Method:

• Sift all the dry ingredients into large bowl and set aside.
• Whip all wet ingredients (except blueberries) for 2 - 3 minutes on high speed.
• Blend the wet mixture with the dry mixture and fold in blueberries using a spatula or wooden spoon. Be careful not to over mix.
• Spray muffin pans with vegetable or grapeseed oil cooking spray, or use muffin papers or silicone muffin molds.
• Fill muffin cups 3/4 full with batter using a cookie scoop
• Sprinkle a little bit of the raw sugar on top of each muffin before baking.
• Bake muffins at 375 degrees for about 25 minutes, or until muffins spring back when lightly pressed
• Makes approximately 30 regular size muffins

After you remove the muffins from the oven let them sit for about 30 minutes to cool. This blueberry muffin recipe is so good you will want to share it with your friends!
